Five chrome-plated pan racks in each compartment accommodate five 18-inch by 26-inch standard baking pans in a left-to-right position. To achieve various roasting or baking results, these pans can be repositioned in 15/8-inch increments, and they're removable for cleaning as needed. Each section's two dependent doors feature a powder-coated handle that opens the doors simultaneously so operators can load and retrieve pans with ease. The doors' dual-pane thermal glass windows grant a clear view of baking contents. This 381/4-inch-wide by 367/8-inch-deep by 705/8-inch-high unit's durable, corrosion-resistant stainless steel construction includes 61/2-inch adjustable legs to prevent rocking on uneven flooring.For fast baking, roasting, or rethermalizing, the Blodgett ZEPH-100-E DBL Zephaire double-deck convection oven's compartments circulate heat from their tubular heaters using a 1/2-horsepower, two-speed fan motor. The compartments' temperatures can be adjusted individually from 200 to 500 degrees Fahrenheit via the solid-state infinite controls. A 60-minute timer provides an accurate measurement of elapsed time, ensuring its contents cook properly.
