In the oven, heat is generated by electric elements, and then a blower distributes that hot air around the cavity. The heat surrounds cooking product, helping it bake evenly and quickly. For large, thick product, the fan can run at its high speed, while its low speed is better suited to small, delicate items.Controlled with rotary knobs, the temperature in this Vulcan VC5ED full-size convection oven can be set at a level between 150 and 500 degrees Fahrenheit, while the timer can track cook times as long as 5 hours. As product cooks, users can watch it through the windows without opening the door. This design not only keeps in the heat for fast baking but also helps ensure product does not burn.
