Cook/Hold Cabinet, mobile, electronic solid state controls with easy to operate knob, natural browning, cooks at 350 F/holds at 250F, capacity (16) bun pans or (32) steam table pans, stainless steel interior & exterior, 5 casters; 2 swivel with locks, 2 rigid, 208-240v/50/60/1-ph, 5700/7590 watts, 28.0/32.0 amps, cord with NEMA 6-50P (NOTE: Ovens available in single phase only), cUlus Listed, UL EPH ( Vulcan - VCH16 ) - The Vulcan VCH16 cook-and-hold oven keeps food warm or reheats it prior to serving. With a 16-sheet pan capacity or a 32-steam table pan capacity, it's designed for commercial use. For versatility, 10 pairs of removable, universal tray slides can be raised or lowered on 11/2-inch centers. Users can also cook food at 350 degrees Fahrenheit with solid-state controls and hold food at temperatures as high as 250 degrees Fahrenheit. Because the unit is equipped with knob controls, operators can incorporate nine custom programs, and a digital display shows time, cooking temperature, holding temperature, and oven temperature. Heat is distributed evenly because the oven is fully insulated and furnished with a low-speed fan.To withstand common wear, the Vulcan VCH16 cook-and-hold oven's interior and exterior have a 20-gauge stainless steel construction, and its frame is integrated to increase its strength. Heavy-duty door hinges are secured to the internal frame to reduce the risk of damage, and a magnetic door latch helps ensure the oven is closed. So that the unit can be moved for cleaning or catering purposes, it's supported by 5-inch casters, two of which have a swivel with locks and two of which are rigid, enabling turning, reversing, and securing it in place.
